Mint, Mango, Watercress, and Quinoa Salad with Lime
This salad is light and refreshing. It has the sweetness of ripe mangoes, the bite of peppery watercress, and the freshness of mint and the zing of lime dressing. Great for a healthy meal that fills you up.
Ingredients:
- 1 cup quinoa, cooked and cooled
- 2 ripe mangoes, diced
- 2 cups fresh watercress leaves
- 1/2 cup fresh mint leaves, chopped
- Juice of 2 limes

- Salt and pepper to taste
Instructions:
In a large bowl, combine the cooked quinoa, diced mangoes, watercress leaves, and chopped mint
