Ultimate Veggie Delight Sandwich
This Ultimate Veggie Delight Sandwich is a celebration of fresh, vibrant flavors packed between slices of wholesome whole grain bread. It's perfect for National Sandwich Month or any time you're craving a satisfying vegan meal.
Ingredients:
- 1 cup hummus
- 4 slices whole grain bread
- 1 large avocado, sliced
- 1 medium cucumber, thinly sliced
- 1 large tomato, thinly sliced
- 1/2 cup alfalfa sprouts
- 1/4 cup shredded carrots
- 1/4 cup sliced red onion
- 1 tablespoon Dijon mustard
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
Spread hummus evenly on each slice of bread
Layer avocado slices, cucumber slices, tomato slices, alfalfa sprouts, shredded carrots, and red onion slices on two slices of bread
Drizzle Dijon mustard and balsamic vinegar over the veggies
Season with salt and pepper to taste
